Squash has to be one of my favorite seasons, all but spaghetti, I don’t care for it all that much. Tonight, for a late-night dinner, after my husband gets home from work and then class and my son gets home from his cross country meet they will come home to this dish, patiently waiting for them. Instead of quinoa, I am going to use farro. It’s heartier and chewier, I love it for those reasons, plus is sounds kinda famous, at least for a grain… tonight’s dinner? Kale salad with roasted butternut squash featuring ‘Farro’.
